Read-only view on folder with filtering

Is there a way to create a read-only view on one folder and also apply filtering on files or folders?
There is a tool called rofs that goes a little in this direction, creating read-only mounts on folders, but I couldn't find any filtering option.
The reason I want to do that is to initialize a folder with git, that already is initialized on another git. So my idea is to mount that folder, filter out the .git folder, and then initialize it with git myself.
Any ideas?
