installing Nvidia GTX 780 drivers on Ubuntu 16.04

I'm having trouble installing Nvidia drivers for my GTX 780. A fresh Ubuntu 16.04 installation works fine "out of the box" with my dual display setup (I'm assuming using third party Nvidia drivers), but after I run:
sudo apt-get update
sudo apt-get install nvidia-384
and restart, the display defaults to some low-res form (single monitor only) and I can no longer log in.
Note: I'm aware that this is related to existing posts here on Nvidia GTX 780 drivers but I didn't see any definitive answers for those.
