Getting back installed grub2 OS menu almost done but need help

I've messed up things on hard disk when removing Fedora leaving Windows 10 and Ubuntu...as result no Hard drive filesystem is seen on bios nor any boot option entries based on hard drive installed systems. I have installed Grub on /sda while installing Ubuntu alongside already installed Windows 10. Also /sda1 is ESP BOOT efi partition (100mb, fat32) with efi files and grub. I've managed to get back normal grub menu with "Windows prober os /dev/sda1" and "Ubuntu" by operating on Grub prompt/rescue when booting LiveUSB Ubuntu. But here are some questions...as I can get only this way to grub prompt the (hdx,x) map layout is changed like probably only boot sector of entire hard disk is on (hd0) but rest partitions are moved like /dev/sda1 isn't in liveUSB mode on (hd0,1) but is temporarily on (hd2,1)...so if Ubuntu root files on /dev/sda8 I do
set root=(hd2,8)
set prefix=(hd2,8)/boot/grub
insmod normal
normal
...enter and proper grub menu appears with all systems...but...either Windows or Ubuntu won't boot, load like starts to load but suddenly stops. I know that normally it should be set root=(hd0,8)...etc all assigned to(hd0,8). Even I try to again press 'c' in this recovered grub menu it's same partitions (hdx,x) layout as in liveUSB grub prompt. The thing is all grub.cfg etc files are configured using (hd0,8)...also Windows os-prober /dev/sda1 is (hd0,1) not (hd2,1) if it would boot normally and not thru liveUSB.
Another thing which little bother me is that when I do in grub prompt
grub> ls (hd0)/
it says "unknown filesystem" and few files missing like
error: file `/boot/grub/x86_64-efi/'filename'.mod not found
maybe (hd0) in this mode is USB set as hard drive as in bios only USB appears as Hard drive filesystem, no real internal hard drive is found (only detected by bios as attached hardware ST1000LM024 HN-M101MBB)
is it possible to run grub prompt/rescue from liveUSB without these issues?
