Installer freezing, both on 16 and 17. Same on all Ubuntu Distros

I'm trying to install Ubuntu Desktop 17.10.1 on an Acer Nitro 5 (AN-515-51) and every time I try to install it the installer freezes and I have to force reboot. I've tried from multiple USB sticks (including a brand new 32GB SanDisk USB 3.0) and with both this version and 16.10.4. The same thing has happened every single time. This is the case on all Ubuntu distributions. It has worked with Linux Mint and Fedora but for the work I'm doing I need Ubuntu.
